Why would a fostermother want to do mediation to adopt my kid when i want him?

Get a lawyer immediately and please do not sign any papers at any time. If they insist just say no. In fact if I were you get a clean piece of paper and write a letter stating you will not give up your child to the foster mother at any time. You want your kid. Get it notorized, and then send this to the judge asap.

Dont let no one trick you into giving up your rights for your child.

I would think that the foster parent wants to love and protect your child. If the courts thought that you are capable of the same thing, your child wouldnt be in foster care to start with.
