I have a legal question regarding chiropractic insurance.?

I've been working for a chiropractor for about two months and I'm starting to feel the way they do their daily notes for the insurance company is really fishy. I am wondering if anyone knows where online I can read laws regarding insurance fraud, or what insurance companies require from chiropractors...anything would be helpful. I would really appreciate it. If my suspecions are right I might be in a little trouble.

For NOTES you mean the services they are billing for??

It depends what state you are in and what insurance company you're talking about? Doctors offices deal with many different insurance companies, and those companies have their own policies for seeking notes, or extra information. It also depends on the policy holders insurance plan on what they can bill and get paid for.

They would want to know that he's a licensed chiropractor, if he's a participating provider, and mostly just info about the patient.

Insurance companies generally don't require a lot of info. Just a bill and as long as the service is covered, it will be paid. If they are billing for services that were not actually performed, that would be considered insurance fraud... Waiving the deductible is also a no no.
