Can a trust/estate be considered an organization?

Unless the trust has an employer tax ID the answer is no. I have a charitable trust and the laws of where I live do not allow me to claim organizational status without a separate filing. The laws where you live? I have no idea.

No. an estate of a deceased person can't be an "organization'", as I understand that word. A trust COULD be an organization. That is, someone could set up a charitable trust that would be an "organization" for purposes of the Internal Revenue Code for nonprofit charitable educational or scientific organizations, depending on how it was established.
